As a little preview of what to expect, here's a healthy holiday side dish sure to please everyone!
Lemon-cumin carrots. Ingredients: 1 tbsp olive oil, 2 garlic cloves- mashed, 2 tsp ground cumin, 1/2 tsp ground ginger, 1/4 tsp cayenne pepper, 2 pounds carrots- peeled & sliced into 1/2 inch pieces, 2/3 cup water, 1 lemon- juiced, 1 tsp grated fresh lemon zest, 1/4 tsp sea salt, 1/4 tsp freshly ground black pepper. Directions: In a large skillet, heat the olive oil over medium, add garlic to sauté of ~30 seconds. Add the cumin, ginger, cayenne pepper, & sauté for ~30 seconds more. Add the carrots & water, bring to a boil. Cover & lower the heat to simmer for ~20 minutes, until the carrots are tender. Uncover, raise the heat slightly, & cook until the water evaporates. Remove the carrots from the pan, add the lemon juice, zest, salt & black pepper.
